Simple Succulent Salmon & Sensational Saint-Véran Chardonnay Pairing

INGREDIENTS & METHOD

Here at The Grape Kitchen we’re all for chopping and changing. If you want to change a few things depending on your own taste then go for it! We won’t be offended. After all, this is your seared Salmon and Saint-Véran recipe and pairing!

INGREDIENTS

All you need for a delicious meal

2 x Salmon Fillets
6 x New Potatoes (Or as many as you like!)
1 x Shallot
2 x Garlic Cloves
1 x Handful Parsley
Large Handful Baby Spinach
Large Handful Kale
1 x Generous Glug of Terres Secretes Les Preludes 2020 Saint-Véran
1 x Lemon
Large Knob of Unsalted Butter

Serves two people – Adjust Accordingly


METHOD

Wonderful Saint-Veran
  1. Fill a medium sized saucepan with cold water
  2. Wash the potatoes, slice them in half and place in the saucepan
  3. After a few minutes soaking, turn hob onto a medium heat. Par-boil the potatoes for 5-10 minutes, or until slightly softened.
  4. While the potatoes are coming to heat, season the salmon with salt, black pepper and lemon juice.
  5. Turn the oven on to a low heat (100 degree Celsius).
  6. Put a frying pan on a low-medium heat, add the knob of butter.
  7. When the butter is melted evenly over the pan, place the salmon fillets in the pan.
  8. Cook the salmon on the skin for three minutes, flip the fillet over and then cook for a further five minutes.
  9. Place salmon in the oven, to keep it warm.
  10. Take the potatoes out of the sauce pan and add them to the same frying pan that the salmon was in.
  11. Sautee the potatoes, coating them with the leftover butter, until they start to crisp.
  12. While the potatoes are in the pan, chop the shallot, parsley and garlic
  13. When the potatoes are cooked how you like them, place them in the oven along with the salmon. Hold onto the saucepan and water.
  14. Open a bottle of Terres Secretes 2020 Saint-Veran and pour yourself a glass. Drink some of the Saint-Veran, marvel at how delicious it is and how it will make a wonderful salmon pairing.
  15. Add a nice glug of Saint-Véran and deglaze the pan on a low heat. Add the shallots and a small splash of the potato water. When the shallots have browned, add the garlic and parsley.
  16. While the shallot dressing is reducing and nearing completion, turn your attention to the spinach and kale
  17. Take the saucepan that you used for the potatoes, put the water back on the heat. When simmering, add the greens for about 30 seconds, or until the greens start to wilt slightly. Drain the water from the pan and add a little bit of butter (optional).
  18. Turn your attention back to the shallot dressing and add a lick of white wine, then take it off the heat immediately.
  19. Assemble ingredients, serve, drink and enjoy.

What is Saint-Véran AOC?
Saint-Veran AOC is an appellation in the Macon sub-region of Burgundy. Yep, I know that might be a lot to take in. Basically, Burgundy/Bourgogne is like Yorkshire and you have sub-regions, just like Yorkshire is divided into North, West, South and East. In Burgundy, you have Chablis in the North, Cote D’or in the middle, then places like Macon in the South. Saint-Veran is a place within Macon, just like Sheffield is a place within South Yorkshire. Make sense? I hope so.

Is Saint-Véran AOC The Only Appellation In The Macon?
No. Saint-Véran AOC is the only Appellation in the west of the Macon region. However, there are a number of Chardonnay producing appellations in the region, notably Pouilly-Fuisse.

Are Saint-Véran Wines White or Red?
White. Saint-Veran AOC produces exclusively white wines, made from Chardonnay. In Burgundy, there are two main grape varieties planted. These are Chardonnay and Pinot Noir. However, you will find small parcels of Aligote grown in Burgundy. This is a very underrated grape and it’s most famous use is as one of the two ingredients in an authentic Kir cocktail.

What Does Wine From Saint-Veran & Macon Taste Like?
With the Macon region being much further south than the like of Chablis (which is the most northerly appellation in Burgundy), there is a stark difference in wine style, despite them both being Chardonnay producing areas. This is because the weather and climate is considerably warmer and the warm weather in the Macon influences the grapes and even brings the harvest forward. Whereas Chablis is lean flinty and minerally, Saint-Veran and Macon wines are well-structured, fuller-bodied and have wonderful tropical and stone fruit flavours like peach and pineapple.
