The first time I tasted Olivier Pere & Fils Brut Champagne, I had brought a client to a fancy yet intense tasting in the Westminster area of London. I like to be transparent with my customers and clients, and I like to demonstrate the process I go through when selecting wines for the website or wine lists. We started the tasting with a banging Cremant de Bourgogne and then we tried this. Upon taste, my client bluntly told me he wanted it on his wine list.
Like many Champagne houses, Olivier Pere & Fils is family-owned. It reminds me in a way of Henri Chauvet. They own approximately 20 plots of land where they grow Pinot Noir, Pinot Meunier and Chardonnay vines, on the idyllic limestone hills of the Marne Valley.
What’s so good about this Champagne? Well, it’s so refreshing and complex. There’s a wonderful vibrancy to it. It’s got vivacious and crisp notes of red apple and pear, with subtle hints of lemon zest. The time spent ageing on its lees in the bottle gives this Champagne that classic brioche undertone.
I absolutely love this fizz. Want a good food pairing for Olivier Pere & Fils Brut Champagne? FRIED CHICKEN! Yep, I kid you not. Go to that famous chicken shop, get a bucket and thank me later (don’t go too spicy though, as that would kill the pairing).
