Chateau des Demoiselles is located in idyllic surroundings, nestled between the famous villages of Saint-Emilion and Castillon-la-Bataille. It dates back to the middle ages, when it was ran by a sisterhood of nuns, who took care of the vineyard and taught children of the parish.

TASTING NOTES
The amount of time this wine has been aged in the bottle for really has helped it develop character and complexity. The Merlot has retained a lot of fresh and delicate red plum and cherry aromas. However, there are lovely savoury notes starting to integrate with them. On the palate, you’ll be greeted by lovely tannins, which really help bring about a long finish.
WHEN SHOULD I DRINK THIS?
Now! This wine is right in it’s peak and will drink well, right up until about 2029.
FOOD PAIRING
This is a good pairing with red meats, however this feels right for duck because it’s got some beautiful tannin and acidity that will stand up to the strong taste of it. So, roast duck with a bit of salt, pepper and rosemary to season would be a great shout. Serve it with some roast potatoes that have been cooked in the duck fat and you’ve got a winner!
