Cantina di Negrar produce some fantastic wines, and the 2020 Soave Classico is no exception. Soave gets its name from the Soave Village in Northern Italy. The classico part means that the grapes were grown in the hills surrounding Il-Castello di Soave and not the wider region.
The wine style is crisp, dry, full of stone fruit and salinity. It’s regarded as a great white wine of Italy but it’s pretty underrated in the UK.
A lot of care and attention went into the production of Cantina di Negrar Soave Classico. The grapes were hand-picked and de-stemmed, then pressed very gently in order to carefully extract the juice without any skin contact. The wine was fermented at very cool temperatures, which brings out more of the fruit characteristics in the wine.
With this wine, expect wonderful stone fruit aromas such as peach and honey-dew melon. There’s wonderful zesty flavours of tangerine and it’s got a lick of salinity to cut through the fruit.
Soave lends itself perfectly to seafood. I’d go for a lovely squid ink risotto!
