I am in love with Cantina Di Negrar Valpolicella Classico. It’s youthful, yet complex and well-balanced.
Expect a ruby red wine, with hints of purple. On the nose you’re hits with an abundance of floral notes, intertwined with red cherry and redcurrant aromas which are then supplemented with hints of black pepper and spice.
Upon taste, it’s medium-bodied but has really velvety tannins that help bring nice structure and complexity to the wine.
I paired this wonderful Valpolicella Classico with a lamb and tagliatelle ragu a few weeks ago, and it did not disappoint. At 12.5% I thought it might have been a little bit too light to stand up to the slow-cooked lamb, but it completely held its own and made a tremendous pairing.
