Everything. This is genuinely an outstanding traditional method sparkling wine. The 2016 Brut is a single-vineyard bottling from the Lightfoot Home Farm Vineyard. It was farmed biodynamically. The vineyard is meticulously maintained by hand to optimize ripening and minimize disease pressure.

Lightfoot & Wolfville Brut 2016 is made from 100% Chardonnay. It’s whole-cluster pressed, followed by primary fermentation in stainless steel and aged 46 months on lees.

 

Expect wonderful citrus notes, hints of pear and a bit of stone fruit like peach on the nose. There’s little hints of brioche and butter but everything works so well in harmony. The finish is long and refreshing, as the acidity in this sparkling wine is absolutely insane.

WHO ARE LIGHTFOOT & WOLFVILLE

Lightfoot & Wolfville are a family-owned winery, based in the town of Wolfville in the Gaspereau Valley. They’re one of the only wineries in the region that practice biodynamic farming and all their wines are certified organic at the very least. I’m so excited to have their 2016 Brut in stock, joining the rest of our Nova Scotian wines.

WHAT DOES THIS WINE TASTE LIKE?

To say it had the best part of four years ageing on it’s lees, this wine is insanely fresh and the fruit really shines through. It genuinely is in the top five of best sparkling wines I’ve tried. Don’t just take my word for it though. I was at a Canadian wine masterclass hosted by Jamie Goode recently and he said the wines sparkling wines from Nova Scotia were world class. WHAT DOES THIS WINE PAIR WITH?

So, typically I would say a lobster role. However, I get that I’m in England and lobster isn’t the most widely eaten food in these parts. I’ve said it a few times, but sparkling wines go very well with fried food. Genuinely, if you want a good pairing then deep fried oysters with some pickled shallots on top would be great with this. However, if you want an ‘every day’ pairing then go to your local chip shop and get fish and chips.
