The Accomplice Chardonnay is a must for any Chardonnay lover. It’s one of those wines that has all the hallmarks of classic Chardonnay and you can just drink so easily.
A large portion of the grape juice was handled oxidatively. This was done to bring out more textural complexity to the wine and enhance stone fruit aromas, such as peach, apricot and nectarine. An example of these practices is fermenting in oak barriques, so the qualities from the barrels can blend fully integrate with the wine (This wine was barrel fermented).
Parts of the wine naturally entered malolactic fermentation. This is when the malic acid (present in all wine) converts to lactic acid. The lactic acid is what gives Chardonnay its famous creamy and buttery texture.
The results are a wonderfully well-structured wine with a very round mouthfeel, with perfectly balanced fruit, vanilla and oak flavours. Give it a try!
Try this with our Cauliflower casserole. You can’t go wrong!
