This is a sensational organic sparkling wine, made from the beautiful Grillo grape. It's produced in the 'charmat method', which is the same way as Prosecco. So, expect wonderful fruit notes, high acidity and delicate bubbles.
 
TASTING NOTES:
 
The lovely hot climate in Sicily helps the Grillo grapes achieve full ripeness, and in turn the sparkling has beautiful weight in the mouth and a good depth of flavour. It's fruit forward with citrus and tropical fruit notes, but it also has a nice creaminess to it, which stops it from being over acidic.
